During the year, most of the cultivation is done by hand, to protect the vine and the soil, avoiding numerous passages of heavy equipment. Only organic products are used. The vines are treated with a proprietary herbal mixture including filtered rain water, avoiding the city’s running water full of non-organic and chemical products.


The harvest is done exclusively by hand, in order to keep the natural taste of the grapes and to discard leaves and other foreign items which could give an undesirable and chlorophyll taste to the wine. Hand-picking the grapes from the vines also allows the vintner a first sorting of only the best grapes, while discarding the rest.
